POMMES PARMENTIER

S/N Method :
1 Potatoes  600 gm       1 Wash, peel and rewash the potatoes.
2 Oil  200 ml       2 Trim on three sides and cut into 1 cm slices.
3 Salt  2 gm       3 Cut the slices into 1 cm strips.
4 Pepper  1 gm       4 Cut the strips into 1 cm dices.
5 Parsley - chopped 2 gm       5 Wash well and dry in a cloth.
            6 Cook in hot shallow oil in a frying until golden brown.
            7 Drain, season lightly and serve sprinkled with chopped parsley.
