1 Aubergines  225 gm       1 Cut aubergines into thin roundels. 
2 Oil - to fry  200 ml       2 Season and dredge in the flour. Remove the excess flour
3 Refine flour  15 gm       3 Fry in hot oil, till golden brown and crisp in texture. Serve at once to be eaten 
4 Salt and pepper to taste         crisp; garnished chopped parsley.
5 Parsley - chopped  a pinch       4  If not served immediately they lose quality.
